Following the publication of the first edition of this guideline, Campden BRI embarked on a number of MRA (microbiological risk assessment) studies, with and for partners in industry. The intention was to study and learn how MRA could be used by the food industry, and to compare the differences between these studies and Codex MRAs. This second edition of the guide describes how MRA as a tool is now perceived and used. Focussing on IMRA, it provides a basic introduction to its concepts - what it is, what it is not, what it can do for your business and how it relates to other quality systems. It then provides a structured step-by-step guide on how to undertake an IMRA from start to finish, and how to prepare and interpret risk profiles.
