We offer some practical sensory training aids if you wish to conduct your own basic training or screening.
Basic taste screening packs
These packs have been assembled to aid sensory departments in industry to train and screen assessors for basic taste recognition with a view to being identified as a trained panellist. The basic tastes includes sweet, salt, sour, bitter and umami.
These packs contain the basic taste chemicals (pre weighed) as indicated in BS 5929 Part 7:1992 / ISO 3972 :1991*, cups, labels, template sheet and instructions to set up a basic taste screening exercise for 15-25 people. Each chemical will produce 1.5litres of the taste solution. The chemicals include sucrose, sodium chloride, citric acid, caffeine, and monosodium glutamate. The instructions clearly state the procedure required to conduct the assessment.
Additional products required include mineral water.

Odour identification screening packs
This pack has been developed to aid sensory departments in industry to screen assessors for descriptive ability of odours and odour recognition. It can also be used to train new assessors to identify certain odours.
The pack contains a variety of sniff pots all of which contain a different odour. The types of odours can be determined by yourself and your requirements. They would be individually labelled with 3-digit codes, and a template sheet and instructions are included to help set up the odour recognition session. There will be a variety of odours available to suit your needs and these have a 6 month shelf life if kept in a cool, dark place. The instructions clearly state the procedure required to conduct the screening.

Ranking basic taste packs
This pack has been developed to aid sensory departments in industry screen assessors for their ability to discriminate between different concentrations of a single attribute (basic taste). It can also be used to aid new assessors understanding of attribute intensities and further determine their ability to discriminate between intensities during initial training. Assessors are presented with 4 concentrations of each taste and are asked to order (rank) the samples in order of strength. The instructions clearly state the procedure required to conduct the assessment and how to analyse the results.

Taste sensitivity thresholds testing pack
This pack has been assembled to aid companies to gain an understanding of panellists’ specific sensitivity to each basic taste: acid, salt, sweet, bitter or umami. This is invaluable for development teams and sensory assessors to understand the feedback they provide during taste panels. The test is based on ISO 3972:1991, where assessors are presented with 8 increasing levels of each taste and are asked to determine the point at which they are sensitive and correctly identify each taste.
The instructions clearly state the procedure required to conduct the assessment and how to analyse the results.
