Safe pasteurisation: Campden BRI seminar
Many thermal processing events deal with the sterilisation of foods. Pasteurisation on a commercial scale tends to get overlooked. This Campden BRI seminar, to be held on 11 March, will focus on this important food preparation and preservation area, looking at key aspects, including:
- Safety issues relating to cooking and pasteurisation ‐ microbiology and regulations.
- Effective pasteurisation ‐ equipment, process validation, optimisation and temperature monitoring
- Novel pasteurisation techniques ‐ emerging techniques, microwave volumetric heating
- Post process ‐ TACCP and shelf life
